The process of preparing the fruit leather involves pureeing fresh fruits, spreading the mixture thinly, and then drying it until it reaches a pliable, leathery consistency. Common fruits used in lavashak include pomegranates, sour cherries, plums, apricots, and other seasonal fruits. Lavashak is enjoyed for its natural sweetness and the concentrated flavors of the fruits used in its preparation. Typically, lavashak is rolled up, and pomegranate, along with pomegranate molasses, is commonly added to impart a sour and delicious flavor to this treat.

You can easily prepare Persian fruit leather in your own kitchen by cooking fruits to create a jammy-like consistency and then spreading it on a baking sheet for dehydration in the oven. I would follow this recipe if you are interested in re-creating it on your own. However, I am able to buy a pre-made Persian fruit leather from my local Arabic grocer.

The fruit leather on it’s own has natural sweetness from ripe fruits, balanced with a subtle tartness. Where can I buy these ingredients?

Many Arabic grocers stock these ingredients, but not all of them may carry Persian fruit leather. If you’re in search of this specific item, consider exploring several Arabic grocers in your area until you find one that stocks it. Here’s a breakdown of the ingredients:

  1. Pomegranate Molasses: Readily available in most Arabic grocers.
  2. Persian Fruit Leather: You may need to check multiple grocers, as sizes can vary. Look for smaller paper sheet sizes, as some Arabic grocers may offer larger sheets. With a wide array of flavors available, I opted for pomegranate and sour cherry.
  3. Pomegranate, Lemon, and Salt: Essential components to complement and enhance the flavors of your lavashak.

How to make Lavashak treats?

Begin by cutting your Persian fruit leather sheet in half, creating pieces approximately 6×4 inches in length. I used pomegranate and sour cherry fruit leather.

Take a tupperware or glass dish and pour a couple of tablespoons of pomegranate molasses into the bottom. Reserve the remaining pomegranate molasses for use inside the fruit leather.

Place one sheet of fruit leather in the dish and generously spread pomegranate molasses over it. Then, add whole pomegranate seeds, lemon, and salt. If you prefer, you can keep it simple and omit the lemon and salt.
